Ina Garten knows her fresh summer produce — her beautiful, bright recipes look almost too good to eat (almost being the key word). Still, though, as summer is winding down, it’s time to savor every last bit of fresh fruits and veggies that are right in peak season. 

Whether you’re grilling vegetable skewers or tossing salads, there’s ample opportunity to get in the kitchen. And a star ingredient that Ina loves? Tomatoes. They’re versatile, delicious, and should basically be used in every meal. Here are some of our favorite recipes from Ina!

1. Tomato & Avocado Salad

Top arugula with sliced cherry tomatoes and creamy avocado for a hearty salad that works as a side salad or a light lunch. (You may want to add in some extra protein if it’s for lunch, like grilled chicken or salmon.) With some fresh lemon and pepper, there’s a bit of zest and spice to round it all out.

2. Anna’s Tomato Tart

This tart is like a flatbread pizza, with Gruyère cheese, Parmesan, tomatoes, fresh herbs, and a crispy, delicious crust as a base. It’s a great recipe to make and then keep on hand when you want a slice or two or to have for a crowd as an appetizer.

3. Tomato Feta Salad

Cheese and tomato go hand in hand, and salty feta is delicious with fresh cherry tomatoes and some herbs, like basil and parsley. Ina takes advantage of heirloom tomato season in this salad — she uses both yellow and red tomatoes for added color and flavor.

4. Summer Garden Pasta

You can enjoy this light angel hair pasta with fresh heirloom cherry tomatoes and some grated Parmesan cheese on any sunny day, dining al fresco. Add in some garlic and black pepper for more savory notes. Serve with a bottle of vino and you’re set.

5. Gazpacho

Sip on a chilled gazpacho — which is a tomato-based soup — on a warm summer day. (Who can handle a hot soup in 80 degrees, right?) This soup uses plum tomatoes and has a ton of other veggies, like cucumbers, bell peppers, and onions. It’s nice and light.
