  • 2 -6jalapenos
  • 1 12 cupsvinegar
  • 1 (13 ounce) can tomato paste (369 ml)
  • 1teaspooncayenne pepper (or more)
  • 5teaspoonssalt
  • 12 teaspoonpaprika
  • 12 teaspoondry mustard
  • 12 teaspoonoregano, parsley, rosemary, thyme, as desired(optional)

    DIRECTIONS

  • Chop the tomatoes, onions, apples, peppers.Mince the garlic. Place in a large pot.
  • Add the vinegar.Stir well.Bring to a boil, then reduce heat and simmer for 1 hour, stirring often.
  • Add the tomato paste, salt, paprika, mustard and herbs.Stir really well.Cook for 15 minutes more.
  • Cool slightly.Ladle into jars or containers.If freezing, leave ample head space.Cool completely, label and place in freezer.
  • If canning, process jars in boiling water bath for 20 minutes.Follow all safety instructions for canning.
