This sauce is nice and peachy, but ginger and mustard bring it back to classic BBQ. The ketchup adds some depth, and the pepper is forward, but not too much. Using ripe peaches is important here, and depending on the sweetness and juiciness of your peaches, you may have to adjust consistency in the blender with a little water. Try it slathered on chicken legs or pork tenderloin—just make sure to put it on at the end since it’s sugary.
- 5 pounds fresh peaches, peeled and chopped (to yield 5 cups)
- 1 cup water
- 1 tablespoon granulated sugar
- 2 teaspoons grated fresh ginger (or 1 tsp. ground ginger)
- 1 teaspoon dry mustard
- 2 tablespoons ketchup
- 1 1/2 teaspoons kosher salt
- 1 1/2 teaspoons black pepper
How to Make It
Combine peaches, water, sugar, ginger, and mustard in a large saucepan. Bring to a boil over high. Reduce heat to medium, and cook, whisking often, until mixture is thickened and peaches have broken down, 12 to 15 minutes. Remove from heat.
Place peach mixture in a blender. Remove center piece from blender lid; secure lid on blender, and place a clean towel over opening in lid. Process until smooth. Stir in ketchup, salt, and pepper.
