    400g can cannellini beans, drained
    1 small red onion, finely diced
    250g cherry tomatoes, halved
    95g pack lamb’s lettuce
    1 tbsp extra virgin olive oil
    2 tbsp sherry vinegar
    1 tsp Cooks’ Ingredients Simple Sumac
    ½ x 25g pack garden chives, chopped


    1. Mix together the beans, red onion, cherry tomatoes and lamb’s lettuce.

    2. Whisk the oil, vinegar, sumac and chives and toss into the salad and serve on individual plates or as a big bowl in the centre of the table.
