Enjoy the flavors of poblano, Chipotle, and Jalepeno in this delicious tamale pie

Ingredients

  1. 2 pounds ground sirloin
  2. 1 half large onion chopped
  3. 2 poblano peppers chopped
  4. 1 jalepeno chopped
  5. 1 tbsp butter
  6. 1/2 tbsp salt
  7. 1/2 tsp oregano
  8. 1 tsp chipotle powder
  9. 1 (16 oz) can enchilada sauce (hot)
  10. 3 boxes jiffy corn bread mix
  11. 3 eggs
  12. 1 cup milk
  13. 1 (16 oz) can mexicorn
  14. 1 1/3 cups Mexican blend shredded cheese

Steps

  1. Preheat oven to 350• F

  2. Sauté onions with butter in high rimmed pan until translucent, then add poblanos and continue for about 3 minutes.

  3. Add beef ? to pan and brown, stirring in salt, oregano, and chipotle powder.

  4. When browned, add enchilada sauce, reduce to medium/low heat, and simmer for about 10 minutes.

  5. Make one box of cornbread using 1 egg and 1/3 cup milk ? grease a large glass baking dish and spread batter along the bottom.

  6. Drain corn ? and layer atop corn bread, spread beef over corn.

  7. Make remaining 2 corn bread boxes using 2 eggs and 2/3 cups milk, add jalepeno and 1 cup cheese to this mix, spread atop beef.

  8. Bake at 350• for 40 minutes

  9. Spread 1/3 cup cheese ? on top, bake for another 10 minutes.
