INGREDIENTS

  • 3cupsflour
  • 1 12 cupssugar, preferrably organic
  • 1teaspoonbaking soda
  • 1teaspoonsalt
  • 1teaspooncinnamon
  • 1cup chopped walnuts (or pecans)
  • 3eggs, beaten
  • 1 12 cupsoil
  • 2cupsmashed bananas
  • 1 (8 ounce) can crushed pineapple, drained
  • 2teaspoonsvanilla
  • DIRECTIONS

  • Preheat oven to 350°F.
  • Butter and flour2 (9x5x3) loaf pans.
  • Mix dry ingredients together and set aside.
  • Combine wet ingredients in a large bowl and mix well.
  • Add flour mixture to banana mixture and gently combine until just moist. Do not over-mix.
  • Bake at 350°F For 65 minutes.
  • Cool 10 minutes before removing from the pan.
