1 1⁄2 cupssugar, preferrably organic
1cup chopped walnuts (or pecans)
1 1⁄2 cupsoil
1 (8 ounce) can crushed pineapple, drained
Preheat oven to 350°F.
Butter and flour2 (9x5x3) loaf pans.
Mix dry ingredients together and set aside.
Combine wet ingredients in a large bowl and mix well.
Add flour mixture to banana mixture and gently combine until just moist. Do not over-mix.
Bake at 350°F For 65 minutes.
Cool 10 minutes before removing from the pan.
