INGREDIENTS 3cupsflour 1 1⁄2 cupssugar, preferrably organic 1teaspoonbaking soda 1teaspoonsalt 1teaspooncinnamon 1cup chopped walnuts (or pecans) 3eggs, beaten 1 1⁄2 cupsoil 2cupsmashed bananas 1 (8 ounce) can crushed pineapple, drained 2teaspoonsvanilla
DIRECTIONSPreheat oven to 350°F.Butter and flour2 (9x5x3) loaf pans.Mix dry ingredients together and set aside.Combine wet ingredients in a large bowl and mix well.Add flour mixture to banana mixture and gently combine until just moist. Do not over-mix.Bake at 350°F For 65 minutes.Cool 10 minutes before removing from the pan.
