Ingredients

  1. 1 cup salsa
  2. Olive oil spray
  3. 2 1/2 cups butternut squash, diced
  4. Salt & pepper
  5. 1 onion
  6. 3 tsp garlic
  7. 1 can tomatoes
  8. 1 can black beans
  9. 1/4 cup cilantro
  10. 1 tsp cumin
  11. 1/2 tsp chili powder
  12. 1/4 cup water
  13. 6 tortillas
  14. 1 cup shredded cheese
  15. 2 tbsp scallions
  16. Sour cream

Steps

  1. Preheat oven to 200. Place 1/4 cup salsa on the bottom of baking dish.

  2. Heal oil in pan. Add onion, garlic and cook. Add buttnut, tomatoes, black beans, water, cilantro, cumin, chili powder, salt and pepper. Cover and cook for 35 minutes.

  3. Place filling in the center of each tortilla and roll, placing on the baking dish seam side down.

  4. Top with salsa and cheese and bake for 10 minutes. Top with scallions and sour cream
