1. 600 g chicken breast
  2. 1 cup parsley
  3. 1 cup cilantro
  4. 1 cup parmesan
  5. 2 tbls garlic paste
  6. 1 tbls dijon mustard
  7. 2 stalks green onions
  8. 1 Chilli pepper
  9. 2 eggs
  10. to taste Salt
  11. 1/4 cup vegetable oil


  1. In a food processor, mix in all the ingredients as listed above (use 1 egg here) and process until the ingredients are processed and mixed well.

  2. Scoop a tbl of the mixture and form into balls. Arrange the koftas on a plate.

  3. Allow the chicken-parmesan balls to rest in the refrigerator for about 30 minutes

  4. In a bowl, beat 1 egg and keep aside to dip the chicken balls before frying

  5. Over high heat, in a frying pan, add 1/4 cup of cooking oil and shallow fry the balls until cooked through

  6. Serve with pita bread and a yoghurt mint sauce or Tahini
