Cupcakes are my all time favorite recipe….So today I make my favorite recipe.#EidKiMeethas
Ingredients
- For cupcakes batter:
- 1 cup boiling water
- 1 & 1/3 cup all purpose flour
- 1/2 cup cocoa powder
- 2 teaspoon baking powder
- 1/4 tsp salt
- 2 teaspoon pure vanilla essence or extract
- 1 cup granulated white sugar
- 1/2 cup unsalted room temperature butter
- 2 large eggs
- For vanilla buttercream frosting:
- 1/2 cup unsalted room temperature butter
- 1 & 1/2 cup powdered or icing sugar
- 1 Tbsp milk- room temprature
- 1 teaspoon vanilla essence
Steps
First preheat the oven (375 F/170 C).In a bowl add boiling hot water and cocoa powder.Mix it until smooth mixture.Let it cool to room temperature..
Sift flour, baking powder and salt together.Mix the dry ingredients well.
In a separate bowl,add butter and sugar and beat it until fluffy. And then add vanilla essence or extract
Add the eggs one at a time,beat until smooth
Add flour mixture in butter mixture and beat it only until incorporated
Add cooled cocoa mixture and beat until smooth
Fill each muffin cup about two-third full with batter
Bake it on preheated oven for 16-17 minutes.If the cupcakes will not cook perfect then you can bake it for 2-3 minutes more.Don’t bake the cupcakes over or dry.After bake place the cupcakes over cooling rack..
For vanilla buttercream frosting: Beat the butter until smooth.
Sift icing sugar gradually(don’t add all sugar) in butter and beat it
Then add vanilla essence,Beat it and continue add sugar and milk
If it need to be thinner add little of milk and if it need to be thicker add sugar in it.pour the frosting in piping bag.
Once the cupcakes will completely cooled,forest the frosting
Sprinkle some colorful sugar or chocolate and enjoy?
