  • 500g fajita frozen mixed vegetables (red, green, yellow peppers, onions)
  • 12 cup sun dried tomatoes w olive oil (Costco)
  • 14 cupbutter
  • 1 12 cupswhipping cream
  • 18 cupparsley
  • 18 cup kodiak waffle mix
  • 2cups cooked cauliflower rice
  • 1pinchsalt
  • 1pinchpepper

    DIRECTIONS

  • 1.Cook frozen shrimp, in a large frying pan, on med-high for 5 minuteShrimp should be partly pink (slightly undercooked).
  • 2. Drain shrimp, set-aside on a plate.
  • 3.Add sun dried tomatoes, Fajita mixed vegetables, butter to frying pan cooking on med-high for approximately 5-7 mix, until softened, stirring occasionally.
  • 4.Add whipping cream, cook until bubbling.
  • 5.Sprinkle Kodiak waffle mix to thicken.
  • 6.Turn off heat, add shrimp back, and parsley.Let sit for 2 minute.
  • 7.Serve on cauliflower rice or basmati rice.Enjoy!
