This is a recipe I adapted from weight watchers. It’s delicious and healthy and one of my favorites. Don’t be intimidated by the amount of garlic used. It only seems like a lot but if you’re like me, garlic is life. Its really not as potent as you may think.
Ingredients
- 2 tbsp olive oil
- 1 cup sweet onions, chopped
- 10 cloves or 1 bulb of garlic
- 1 pound chicken, cut into 1 inch pieces
- 2 1/2 cups fat free chicken broth
- 1 cup sliced mushrooms. I like to use baby bellas
- 1 cup rice
- Salt
- Pepper
- Garlic powder
Steps
Season chicken with salt, pepper and garlic powder.
Put 1 tbsp olive oil in skillet over med-high heat. Add.chicken.
Cook until browned on both sides. About 8 min per side
Remove chicken and keep warm. Deglaze pan with water if necessary and wipe the pan
Add the other tbsp of olive oil. Cook onions and mushrooms
Add garlic and sauté for about 1-2 min
Add rice and broth. Stir well.
Bring to a boil and then put heat on low. Cover and simmer about 20 min.
When rice is done, turn off heat and leave covered for another 5-10 minutes.
Serve and enjoy!
