These plums have all the flavor—sweet, tart, creamy, and salty. And this recipe is a simple and easy way to use delicious, peak-season fruit. Be sure to only grill the plums on the skin side a minute to warm them; otherwise they will get mushy.

- 1/2 teaspoon orange zest (from 1 orange)
- 1/2 teaspoon kosher salt
- 3 tablespoons honey, divided
- Cooking spray
- 4plums (1 1/4 lb.), halved and pitted
- 3 tablespoons chopped roasted salted pistachios
- 2 tablespoons torn fresh mint

How to Make It
Step 1
Whisk together ricotta, zest, salt, and 1 1/2 tablespoons of the honey; set aside.
Step 2
Heat a grill pan over high. Coat grill pan with cooking spray. Grill plums, cut side down, until lightly charred, about 3 minutes. Flip plums, and grill 1 minute. Remove to a plate.
Step 3
Top with ricotta mixture, and drizzle with remaining 1 1/2 tablespoons honey. Sprinkle with pistachios and mint.
Step 4
Alternative Step 2 (Grilling): Preheat grill to high (450°F to 500°F). Coat grates with cooking spray. Place plums, cut side down, on oiled grates; grill, uncovered, until lightly charred, about 3 minutes. Flip plums, and grill 1 minute. Remove to a plate.
