The more textures, colors, and temperatures there are in a dish the more I like it. And this one did it for me. Yum!! Had some tiny roasted potatoes on the side but it would have been satisfying by itself!


  1. Chicken
  2. Korean BBQ marinade
  3. Cashews
  4. Water chestnuts
  5. Onion
  6. Sesame oil
  7. Soy sauce
  8. Sriracha sauce
  9. Lettuce


  1. Coat (and if possible marinate) chicken in homemade or store bought marinade. Cook in sesame oil in skillet. Pictured are all the sauces used.

  2. Roast cashews at 350°F for a few minutes until you can smell them. Chop them up. Sauté diced onion and sliced water chestnuts.

  3. Assemble lettuce wraps with lettuce, chicken, onion and water chestnuts, cashews, and soy sauce and sriracha sauce if desired. Live lettuce was great for this.
