Ingredients
- 2 cups vegetable broth
- 1 cup dried green lentils
- 1 small cucumber, sliced
- 1 handful cherry tomatoes, halved
- 1/4 cup sliced black olives
- 1/2 small red onion, diced
- 2 tbsp chopped dill
- 1/4 cup chopped parsley
- 1/2 cup crumbled feta cheese
- 2 cans lemon pepper seasoned tuna
- 1/4 cup red wine vinegar
- 1/4 cup olive oil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tbsp lemon juice
Steps
Add lentils and broth to a medium saucepan. Bring to a boil over medium heat. Reduce to low, cover and let simmer until broth evaporates. Set aside to cool.
Once lentils are cooled, combine with herbs, veggies, cheese and tuna
In a measuring cup, combine the vinegar, oregano, salt, pepper, and lemon juice, and stir with a whisk until thoroughly mixed
Add dressing mixture to vegetables and lentils. Serve immediately or refrigerate.
