Ingredients

  1. 2 cups vegetable broth
  2. 1 cup dried green lentils
  3. 1 small cucumber, sliced
  4. 1 handful cherry tomatoes, halved
  5. 1/4 cup sliced black olives
  6. 1/2 small red onion, diced
  7. 2 tbsp chopped dill
  8. 1/4 cup chopped parsley
  9. 1/2 cup crumbled feta cheese
  10. 2 cans lemon pepper seasoned tuna
  11. 1/4 cup red wine vinegar
  12. 1/4 cup olive oil
  13. 1 tsp dried oregano
  14. 1/2 tsp salt
  15. 1/2 tsp pepper
  16. 1 tbsp lemon juice

Steps

  1. Add lentils and broth to a medium saucepan. Bring to a boil over medium heat. Reduce to low, cover and let simmer until broth evaporates. Set aside to cool.

  2. Once lentils are cooled, combine with herbs, veggies, cheese and tuna

  3. In a measuring cup, combine the vinegar, oregano, salt, pepper, and lemon juice, and stir with a whisk until thoroughly mixed

  4. Add dressing mixture to vegetables and lentils. Serve immediately or refrigerate.
