Apple pie with no apples? That’s right. The buttery Ritz crackers in this easy, mock apple pie mimic the texture of actual cooked apples while the spices, sugar, and lemon juice combine to replicate iconic apple pie flavor. 

Ingredients

  • 2 cups water
  • 1 cup granulated sugar
  • 2 teaspoons cream of tartar
  • 55Ritz crackers, divided
  • 4 teaspoons fresh lemon juice, from 1 lemon
  • 2 1/2 teaspoons ground cinnamon, divided
  • 1prepared pie crust fitted into a 9-in. pie plate
  • 5 tablespoons unsalted butter, melted
  • 1/2 cup brown sugar
  • Whipped cream, optional for topping

How to Make It

Step 1

Preheat oven to 400°F. Bring water, sugar, and cream of tartar to a boil in a medium saucepan over medium-high. Stir in 30 whole Ritz crackers, and simmer 5 minutes. Remove from heat, and stir in lemon juice and 2 teaspoons of the cinnamon.

Step 2

Pour mixture into prepared pie crust. Crush remaining 25 crackers. Stir together crushed crackers, butter, brown sugar, and remaining 1/2 teaspoon cinnamon; sprinkle topping over filling in crust.

Step 3

Bake in preheated oven until golden brown, 20 to 25 minutes. Let stand at least 10 minutes before serving. Top with whipped cream if desired.
