A quick and easy meal that can be eaten on its own or with a protein of your choice.
- 1/2 cup couscous
- 250 g Brown mushrooms (sliced)
- 2-3 cloves garlic (chopped)
- 1 spoon soy sauce
- 2 sprigs fresh thyme
- 1 dash salt and pepper
- Olive oil for frying
Cook couscous as per packet instructions. Set aside.
Heat about a spoon of Olive Oil in a pan over medium heat.
Add mushroom, garlic and thyme; stir until the mushroom is tender. Add soy sauce and stir.
Add the couscous, and season with salt and pepper to taste.
