Ingredients

  1. 1 TBLS vegetable oil
  2. 1 cup medium or long grain rice
  3. 1/4 cup diced onions
  4. 2 cups chicken broth
  5. 1 can tomato sauce (or diced)
  6. 1 TBLS garlic powder
  7. 1 tsp salt
  8. 1/2 TBLS cumin
  9. Cilantro (optional)

Steps

  1. Heat oil in large skillet and saute onions until translucent.

  2. Add rice and cook until slightly brown.

  3. Add tomatoes, broth and seasonings. Stir well.

  4. Simmer for 45 minutes, trying NOT to stir too much.

  5. Add cilantro in last 10 minutes if desired
