Meal: Poached Egg on the Pillow

Ingredients
- Water
- 1 large egg
- 1 tablespoon rice vinegar or other mild-tasting vinegar (5%)
- to taste Salt, pepper
- 1 piece bread (any that you like)
- 5-10 leaves spinach
- 3-5 cherry tomatoes
Steps
Fill the saucepan with water about 2/3 full and bring to a boil
Once water is boiling, turn the heat down (bubbles should be coming up, but it won’t be rolling)
Wash the egg and crack it into a small cup
Add vinegar to the water
Lower the egg into the water and then tip it out into the water
Cook for 4 minutes
Meanwhile prepare a “pillow” for your poached egg: on a piece of bread (you can slightly fry/toast it) put spinach and chopped tomatoes
Fill a small bowl with cold water
Remove the egg from the saucepan and put it into cold water for 1 minute
Dry the egg with a paper towel
Place poached egg on the top of the “pillow” (on top of tomatoes)
Season with salt and pepper
