Meal: Poached Egg on the Pillow

  1. Water
  2. 1 large egg
  3. 1 tablespoon rice vinegar or other mild-tasting vinegar (5%)
  4. to taste Salt, pepper
  5. 1 piece bread (any that you like)
  6. 5-10 leaves spinach
  7. 3-5 cherry tomatoes


  1. Fill the saucepan with water about 2/3 full and bring to a boil

  2. Once water is boiling, turn the heat down (bubbles should be coming up, but it won’t be rolling)

  3. Wash the egg and crack it into a small cup

  4. Add vinegar to the water

  5. Lower the egg into the water and then tip it out into the water

  6. Cook for 4 minutes

  7. Meanwhile prepare a “pillow” for your poached egg: on a piece of bread (you can slightly fry/toast it) put spinach and chopped tomatoes

  8. Fill a small bowl with cold water

  9. Remove the egg from the saucepan and put it into cold water for 1 minute

  10. Dry the egg with a paper towel

  11. Place poached egg on the top of the “pillow” (on top of tomatoes)

  12. Season with salt and pepper
