Samosa Is one of favorite street food in india ,It has a very crispy outside and that potato filling is the hero of all .To get both right is sometime difficult , street vendor serve hot samosa they crush a bit in middle and pour in sweet and spicy chutney and some onion on top oh god it just taste delicious. I have made samosa quiet a few times but i never got that right but this time i made it again with precision and their u go it came out crisp and filling was delicious too .


  1. 2 Cup Flour / Maida
  2. 4/5 Tbsp Ghee
  3. 1/2 tsp salt
  4. 1 tsp Ajwain
  5. Potato Filling
  6. 4 Potato boiled
  7. 1/2 Cup Peas
  8. 1/2 Tsp Turmeric powder
  9. 1 Tsp Chilli Powder
  10. 1 tsp Coriander powder
  11. 1/2 tsp Amchur Powder
  12. 1 Tsp Cumin powder
  13. 1 Tsp Garam Masala
  14. to taste salt
  15. 1/2 Tsp Cumin powder


  1. First add the flour, salt,ghee and ajwain and rub nicely in hand to get that hold when you press like ball in your palm.

  2. Then add water and make a dough.

  3. For filling in a pan add some oil add cumin once spluttered add the peas and cook for while then add the mashed potato.

  4. Then add all dry spices turmeric,chilli powder,cumin,garam masala,coriander,amchur powder mix well and cook in low flame add salt in last and cool then completely.

  5. Roll the dough in length wise and cut them in half. Apply water in side and make a pocket like cone and fill it with potato and close the mouth in water tight. and deep fry them in low to medium till it’s done completely and crisp.
