It’s like a cooked ceviche but has this nice sweet spicy smoky flavor with the refreshing hit of cucumber and tart of the shallots


  1. 1/3 cup rice vinegar
  2. 1 tsp sesame oil
  3. 1 tsp sugar
  4. Pinch salt
  5. 1/4 tsp red pepper flakes
  6. 1/2 lime
  7. 1 chopped pepper (Thai chile)
  8. 2 shallots brunoise
  9. 1 cucumber (your choice of cut)
  10. Smoked trout (1/2 fillet)


  1. Squeeze lime and Mix all liquids, salt chili & chili flakes into a bowl and make sure to stur well till sugar is incorporated

  2. Mix Cut cucumber any way you want to serve

  3. Cut shallots brunoise so they mix well into the entire salad

  4. Mix all ingredients together and shred the trout fillet and place on top and serve
