I wanted a salad to go with our wine and cheese lunch and didn’t want to work that hard. 🙂


  1. 1 large ripe beefsteak tomato, cut into roughly 1/4-inch slices
  2. salt & pepper
  3. a few very thin slices of onion (preferably red)
  4. oregano (fresh or dried is fine)
  5. Feta cheese
  6. lemon
  7. extra virgin olive oil


  1. Arrange your sliced tomatoes on a plate and season *very* lightly with salt and pepper. (Remember, the Feta is salty, too.)

  2. Top with onions…

  3. Then with oregano…

  4. Then with crumbled Feta…

  5. Squeese a lemon wedge over the whole thing… (a little red wine vinegar also works

  6. And a drizzle of extra virgin olive oil, and that’s it!

  7. Enjoy!
