- 2 chicken breasts, cut into quarters
- Garlic powder
- Chili powder
- 1 block softened cream cheese
- 2 scoops sour cream
- 1/2-1 cup shredded Mexican blend cheese
- 16 corn tortillas
- 2 tbsp olive oil
- Frank's hot sauce
Preheat oven to 425
Sprinkle chicken on both sides with salt, pepper, cumin, chili powder, and garlic powder.
Bake chicken for 20 minutes or until cooked through.
Once chicken is cooked, shred using a fork or a hand mixer
Add sour cream, cream cheese, cheese, 1 tsp cumin, 1 tsp chili powder, and 1 tsp garlic powder. Mix well
Wrap corn tortillas in a damp paper towel and microwave 2 minutes, until soft and pliable
Scoop chicken mixture into tortilla, roll up, and place on foil covered pan.
Brush each taquitos with olive oil, and bake for 15 minutes or until golden brown
For the sauce, mix one big scoop of sour cream with a few drops of hot sauce, to preferred spiciness. Dip taquitos in sauce and enjoy!
