1. 300 g raw king prawns
  2. 1 shallot finely chopped
  3. 4 cloves garlic finely chopped
  4. 2 cm piece of fresh ginger peeled and finely chopped
  5. 1 red chilli seeded and finely chopped
  6. 1 stem of lemongrass finely chopped
  7. 1 good handful of fresh coriander finely chopped
  8. 1 good handful of fresh mint finely chopped
  9. 100 ml olive oil
  10. Grated zest and juice of 1 lime


  1. Put all of the ingredients into a bowl with the exception of the prawns, mix well and leave for 30 minutes to let the flavours blend.

  2. Add the prawns to the marinade, then add the prawns and some of the marinade to a hot frying pan and cook until the prawns turn pink
