Ingredients

  1. Sifter / Thermomix / Blender
  2. 660 g all purpose flour
  3. 600 g light sugar
  4. 3 tsp baking soda
  5. 1 1/2 tsp Himalayan salt
  6. Kitchen machine (KitAid) bowl
  7. 720 ml plant milk (you can use vanilla soy)
  8. 3 tbsp Apple cider vinegar OR
  9. 7 ml natural lemon juice
  10. 240 ml extra virgin olive oil
  11. If you used plain milk :
  12. 5 tsp vanilla extract
  13. Last addition
  14. If you like the little black dots from real vanilla pod :
  15. 1 pod vanilla (inside scraped out)

Steps

  1. All dry ingredients together and sifted OR if powerful blender e.g. Thermomix : Speed 7 die 10sec

  2. Whisk wet ingredients together at lowest speed

  3. Add dry to wet and whisk at low speed for a short time, e.g. 1min

  4. 175C 40 minutes middle rack

  5. Let completely cool
