This recipe is quick, easy, and tastes great. Easily make this vegan by using egg alternatives (my favorite is Just egg) and vegan Cheese! A absolute family favorite in my house!
- 2 Large Eggs
- 1 Shitake Mushroom sliced
- 1/2 Cup Red onion Diced
- 1/2 Cup Sweet Bell Pepper Diced
- 1/4 cup cheese (optional)
- to taste Salt & pepper
- Oil or non-stick spray
In a medium sized, well greased, frying pan add in mushroom, Red onion, and bell pepper. Cook until vegtables are tender.
As vegtables are cooking beat two large eggs.
Once vegtables are tender add in egg mixture. Cook eggs and vegtables together, stiring frequently until eggs thicken and reach a “scrambled” consistency.
Add salt and pepper to taste. Enjoy.
