Ingredients

  1. 1 tbsp Dijon mustard
  2. 1/4 cup veg. Oil
  3. 2 heaping tbsp brown sugar
  4. 1/4 white vinegar
  5. 1 large lemon/lime juice
  6. Salt and pepper
  7. 2 jalapeños diced
  8. 1 large pepper diced
  9. 1/3 large onion diced
  10. 2 stalks celery diced
  11. 1 can sweet corn
  12. 1 can black beans
  13. 1 can kidney beans

Steps

  1. In a large storage container mix your ingredients to make the dressing.

  2. Chop all ingredients and add to dressing.

  3. Mix well and store in fridge. Wait 3 hours before serving to let it all marinate together
