There are a few things that can’t be cooked in the air fryer, and when it comes to cakes, blueberry muffins are among the easiest to make.

Of course, these sweet treats are traditionally cooked in an oven, but they’re much faster in the air fryer which has them ready in 15 minutes.

According to Brandi, the author of the Stay Snatched food blog, this healthy oaty recipe “works great for breakfast”, so they can be enjoyed on busy mornings any day of the week.

She explained that as well as being “quick and easy” to make, they require minimal equipment.

In fact, all that’s really needed is the ingredients, silicone muffin cases, and an air fryer.

Ingredients

  • 190g all-purpose, white or whole-wheat flour
  • 64g old-fashioned oats
  • 110g light brown sugar
  • One tablespoon of baking powder
  • Half a teaspoon cinnamon
  • Half a teaspoon salt
  • 240ml milk
  • 57g unsalted butter, melted and slightly cooled
  • Two eggs (room temperature)
  • Two teaspoons of vanilla extract
  • One cup of blueberries (fresh or unthawed frozen blueberries)

In a large mixing bowl, combine the dry ingredients including the flour, rolled oats, salt, cinnamon, brown sugar, and baking powder.

Add the milk, eggs, vanilla extract and melted butter in a separate medium-sized bowl, then mix with a silicone spatula to avoid sticking.

Combine the wet ingredients with the dry ingredients in the larger mixing bowl to form the complete muffin batter before stirring in the blueberries.

Divide the batter between the 12 silicone muffin cups and add them to the air fryer. Spraying the liners with oil is optional as the batter doesn’t tend to stick, according to Brandi.

Place the cups in the air fryer at 350 degrees, and monitor them closely to avoid overcooking as every air fryer model will heat them differently.

The muffins will need to cook for approximately 11-15 minutes, though the best way to check them is to insert a toothpick into the middle of a muffin. If it returns clean, the muffins have finished baking.
