Now that the weather is colder and the leaves have changed into colours, there is no better time to bake some cosy treats.
Madison Eberhardt is a baker who has turned the cinnamon rolls into an autumn bake. In an interview with the Express, she said: “My caramel apple cinnamon rolls take this classic roll and give it a fall twist. Caramel apple cinnamon rolls are sticky and gooey, thanks to the caramel sauce and the moisture released from the apples during baking.”
Madison has grown in popularity online with her incredible baking skills on her TikTok account @mmatildabakes and her website mmatildabakes.
This buttery roll filled with gooey cinnamon filling and topped with a generous amount of thick caramel sauce is not only delicious but easy to make according to Madison.
She said: “Don’t be intimidated to bake them, as while they take some time, they’re fairly simple to shape and bake. Simply just spread the apples and cinnamon sugar onto your rolled-out dough, roll it up into a long log, and cut into large circular rolls with a knife or string.”
How to make caramel apple cinnamon rolls
Ingredients
For the dough:
- Four and a half cups of bread flour (540g)
- A quarter cup of fine white sugar (50g)
- 7oz of soft unsalted butter (200g)
- 7oz of milk (200ml)
- Two eggs
- Two tablespoons of instant yeast
- Two tablespoons of salt
For the filling:
- One and a quarter cups of dark brown sugar (275g)
- 5oz soft unsalted butter (140g)
- Two chopped green apples
- One tablespoon of cinnamon
For the caramel sauce:
- One cup of granulated sugar (200g)
- Half a cup of heavy cream (120g)
- A quarter tablespoon of sea salt
- Six tablespoons of chopped unsalted butter (room temperature)
Egg wash:
- One egg
- Splash of milk
Kitchen equipment:
- Pot
- Wooden spoon
- Two mixing bowl
- Small bowl
- String
- Baking pan (either 8×8 or 9×9)

Instructions
To make the caramel sauce:
If this is the first time you are making caramel sauce. Madison has said it can seem a little intimidating, but all you need is patience to get the recipe right.
Begin by pouring the granulated sugar into a pot on a low-medium heat. Allow the sugar to melt until it has completely dissolved and browned. Do not stir the sugar, and instead allow it to clump up and melt on its own, which should take around 15 minutes.
Once all the sugar has melted and is dark in colour, take off the heat and immediately add in the butter. Keep stirring and do not stop at this stage. If the sauce is bubbling a lot, this is a good sign.
When the butter has melted, pour in the heavy cream while continuing to stir, and it should eventually become a caramel-coloured sauce. Add the salt if needed and pour
To make the dough:
In order to make the dough, simply place all the ingredients in a mixing bowl and keep stirring for a few minutes until the ingredients are fully incorporated into the dough.
Knead the dough until it is smooth for around four to six minutes. Place back in the bowl and leave it to rise for one hour.
To make the filling:
For the filling, simply combine softened butter, brown sugar and cinnamon into a mixing bowl. Leave it in the fridge to cool as your dough is rising, as this will make it easier to apply later.
Next, chop up the green apples into tiny pieces and then set aside in a small bowl.
To make the cinnamon roll:
Roll out your risen dough into a large rectangle, which should be around 90 x 45cm. Spread the cool filling on top and evenly spread it on the dough.
Sprinkle a little of the finely chopped apples as well onto the dough, but make sure to not use too much. Roll the dough up like a snail from one end to the other. Use string to cut out the cinnamon rolls, and you should be able to get around six to eight rolls out of your dough.
Place your cinnamon rolls into your baking pan. Preheat the oven to 375F (190C) and then egg wash your cinnamon rolls. To make the egg wash, place the one egg and a splash of milk in a small bowl and mix together.
Place your cinnamon rolls in the oven and bake for around 30 to 35 minutes.
Once ready and fresh out the oven, drizzle on the caramel sauce and your delicious cinnamon rolls are ready to serve.
