50g peanut butter
25g cocoa powder
50g plain flour
A few tsp jam
Add the butter and peanut butter to a microwave-safe bowl and cook on High for 30 seconds to melt. Remove the bowl from the microwave and stir the mixture thoroughly. Allow it to cool slightly before adding the egg and stir to combine. Grab a second microwave-safe round dish (about 15cm wide). grease with butter and line with cling film. Tip the peanut butter mix into the lined dish, sieve in the cocoa powder and flour and tip in the sugar. Gently mix everything together to form a thick, sticky paste. Use the back of a large spoon to smooth the top of the mixture.
Use a teaspoon to make crater-holes in the top of the brownie mixture and fill each one with plenty of the jam. This will melt and bubble down when cooked. Put the brownies in the microwave for between three to four minutes on High. Take them out to cool for 15 mins – they will carry on cooking during this time. Enjoy your chocolate treat!
